Potato Salad Recipe

6 eggs, hard-boiled
4 or 5 heaping tablespoons mayonnaise
1 tablespoon mustard
3 dashes paprika
1 dash salt
3 dashes pepper
Put eggs in water in saucepan to hard-boil. Clean potatoes, cube in about 1/2 inch chunks and boil until soft. (I like to leave the potatoes un-peeled.) Dice the onion. Shell the eggs and cut into small pieces. Throw these ingredients into a LARGE bowl, along with salt and pepper, mayo and mustard. Mix thoroughly, You may have to do this with your hands to do a proper job of it. Don't worry about smashing the potatoes, some would say, smashing makes for an even better potato salad. If you use this method, resist the impulse to fling globs in any person's general direction.
Smooth the mixture in bowl so that the top is flat. Sprinkle on the paprika in a tic-tac-toe pattern. Make sure the X's win. You'll look foolish if you let the O's win. (When the O's win it's a sign you really don't know how to play the game.)
Place mixture in refrigerator for a few hours to let the onion flavor spread through the salad and also to let them soften somewhat.
You can also try adding chopped pickles for a different flavor, or chopped peppers for an added crunch.

Best with ham and baked beans or a juicy steak just off the grill.
