1 tablespoon margarine or butter
1 dash salt
1 dash pepper
Put frying pan on medium heat. Add margarine or butter. Slice the zucchini crosswise. Chop onions. When margarine has melted, add zucchini and onions. Add spices to taste. Fry until zucchini is browned. Do not cover, it will make zucchini soggy.
This simple recipe also works for other vegetable such as summer squash and egg plant.
