Chicken and Dumplings Recipe

Preparation Time: 30 minutes
Ingredients:
1 ½ pounds chicken breast
1 tablespoon oil
1 dash pepper
1 dash salt
1 teaspoon crushed parsley
1 teaspoon crushed basil
1 cup frozen peas
2 cut carrots,
4 mushrooms
1 onion
- for dumplings
2 cups flour
4 teaspoons baking powder
2 eggs
½ cup milk
dash of pepper
dash of parsley
First cut up the chicken and toss it into a good sized pot (preferably one with a lid) along with the oil. Fry the chicken, cut up onions, carrots, cut mushrooms and spices until the chicken is no longer raw.
While the chicken is frying, throw the dumpling ingredients together into a bowl and stir thoroughly.
When chicken is done add peas and about ½ cup water. In a small cup mix 2 tablespoons of flower with about ¼ cup water. Bring water and chicken to a boil. While stirring dump in flour and water mixture. This will thicken the broth. Now turn the pot down to simmer and spoon out dumpling mixture over the top. Place lid on pan and cook until dumplings are done. This could take as long as an hour or as little as a half-hour depending on your stove.
