Chicken and Barley Recipe

1 cup barley
1 can chicken broth
1 1/4 cups water
4 fresh mushrooms
2 tablespoons parsley
1 tablespoon basil
1 dash pepper
6 chicken thigh without skin
1 tablespoon margarine or butter
Dump the cup of barley into a baking dish. Pour broth and water over all. Add chopped onion and chopped mushrooms. Toss in spices and butter and mix all briefly with a spoon - or your finger if you insist.
Place pieces of chicken over all, cover, and place in oven at 375 degrees for a approximately 1 1/2 hours or until the barley has absorbed all of the water and broth.
Do NOT force this dish on sensitive dinner guests, they might accuse you of being an imperialist.
Suggested Wine: Any ale will do nicely.
Serving Ideas : Serve with a green vegetable.
