Shake and Bake Chicken

Chicken is generally considered the most healthy of the meats we commonly eat. Much of this belief relies on the preparation. The fact is there is a tremendous amount of fat on any bird. Most of the fat, though, is immediately beneath the skin and is easily removed with the skin. For this reason it is best to eat skinless chicken. My wife generally insists that the chicken also be boneless.

Chicken meat does not need all of the marbling that is necessary for beef. In fact - in most preparations - grease is not required at all. A quick, easy and healthy dish to spring on your wife is Oven Fried Chicken. This is my variation of "shake-and-bake." Only there is no shaking - unless you are into that sort of thing.
